Chocolate cupcakes with ganache topping
To make these chocolate cupcakes I use my favourite chocolate cake recipe found here and divide mixture into muffin cases. I usually get 12 large ones and around 20 mini ones from this recipe. Reduce baking time to approx 15 minutes at 180 degrees (fan oven)
Once baked place them on cooling tray and make ganache.
I’m not a huge fan of chocolate buttercream icing so I make a simple ganache with just two ingredients. I also don’t go by exact measurements but as a rough guide I’d say you need around 200ml of double cream & 4 large bars of Cadburys milk chocolate.
Heat the cream in a pan until it starts to steam and then immediately pour cream over half the chocolate (broken into squares)
Stir well until all the chocolate has melted and then gradually add in the rest of the chocolate (at this stage I pop the bowl in & out of the microwave for a few seconds at a time to help melt the remaining chocolate) After adding all the chocolate and beating with a metal spoon the ganache should now be thick & glossy and ready to pipe onto cooled cupcakes.
Decorate with strawberries, sugar flowers or just some grated white chocolate.
Enjoy!
